This coffee comes to us from the world-renowned growing region of Tarrazu in Costa Rica. Hidden in the Westernmost slopes of the region is a tiny wet mill run by the Mora Family, Agropecuario Hellen focuses solely on wild, natural processed coffee. The Mora’s were one of the first families and micro wet mill projects to take the risk and experiment with their harvests by natural processing. This farm has been under their care for many years, located deep in the remote slopes of Los Santos, overlooking the Pacific Ocean. Pretty removed from civilization, this area of the region has an ideal microclimate for coffee production, and is named La Laguna for its ability to collect rain and natural spring water from this area to care for the crops. We are stoked to share this coffee from this incredible little powerhouse of a milling station.

La Laguna is an excellent example of the unique symphony of flavor offered in Natural coffees, and is perfect for anyone familiar with lighter coffees looking for some adventure.

Compared to other coffee-producing countries, Costa Rica has a relatively small geographical footprint. Despite this, the different coffee-growing regions produce a variety of flavor profiles due to dramatic terrain, from mist-filled valleys to steep high-altitude mountains. The La Laguna comes to us from Tarrazu, Costa Rica’s highest producing and most famous coffee region. Located in the interior mountains of Costa Rica, Tarrazú has some of the tallest peaks in the country. This high elevation results in coffee with a complex flavor profile, sparkling acidity, and a heavy body.
Processing Method: Natural
The process for this washed coffee begins when the coffee cherries are picked ripe, and the fruit then passes through a floating system to remove any imperfections. The coffee cherries are then put in fermentation tanks equipped with valves to allow gases to escape but not enter. That is where they are left to rest for 48-60 hours while they ferment. The fermented cherries are moved directly to raised drying beds where they are turned a few times a day for the following 25 days.
