Coffee

We have all the information about our coffees available on both the online wholesale menu, as well as our retail website. If you have questions outside of the information available, shoot them over to us at wholesale@catandcloud.com and we will do our best to get you an answer!

We recommend using coffee within 30 days of the labeled roast date. This isn’t to say that the coffee won’t be usable after that 30th day, but we have found that this window will get you the tastiest results. We also don’t recommend using coffee within the first 4 days of it being roasted, so it has time to settle and de-gas.

Our coffees are optimized at a 1:16 brew ratio – that's 1 gram coffee : 16 grams water. This goes for pour over, batch brew, and really any method of making brewed coffee!

Our coffees are super versatile with multiple brew methods, so we would definitely encourage you to experiment with different coffees on different brew methods! That said, here are some tried and true recommendations for coffees on our menu that are great for specific brew methods:

Espresso

• The Answer: 19.1 – 19.8 grams in, 31 – 33 grams out, 25 – 31 seconds

• The Truth: 19.1 – 20.5 grams in, 40 – 44 grams out, 25 – 32 seconds

• Night Shift: 18.9 – 19.4 grams in, 30 – 33 grams out, 25 – 30 seconds

• Brazil Fazenda Rainha: 19.1 – 19.8 grams in, 31 – 33 grams out, 25 – 31 seconds

• Ethiopia Natural: 19.1 – 19.6 grams in, 40 – 44 grams out, 25 – 30 seconds

Drip (Batch Brew)

• Dark Roast – Night Shift, After Party

• Medium Roast –The Answer, Ethiopian Natural, Brazil Fazenda Rainha

• Light Roast – Any single origin not already listed (rotating menu)

Pour Over

For pour over, we recommend selecting coffees from the menu that fit the bill for the slot you are looking to fill. We have a range of coffees, from single origins that are light, bright, and exciting, to blends like The Answer and Night Shift that are great on their own, but also take milk and sugar like a champ. The question is, what are you looking for from your pour over coffees?

Cold Brew

• The Answer – for balanced and versatile

• Night Shift – for traditional chocolate and roasted nuts

• Ethiopian Kercha Natural – for blueberries and dark chocolate

• The Truth – for light and exciting

Education

We approach barista training in a simple, but intuitive way to give new baristas confidence in the motions and muscle memory needed to prepare espresso, as well as a fundamental understanding of the concepts needed to dial in tasty espresso, get an even extraction, and steam perfect silky milk.

Our intro barista training covers an equipment overview, bar setup/organization, what espresso is, the espresso recipe, extraction theory, and milk steaming. We also cover our mission with coffee, and how to seek out and identify these flavors. Our goal with training is to get new baristas as comfortable as possible with the equipment and motions of making coffee. We are firm believers that by establishing good technique and execution, and laying the foundation for the basic concepts of dialing in and extraction, new baristas will have a strong base to continue to build upon.

In addition to barista training, we also offer our Coffee Class as a wholesale partner exclusive. This covers the basics of what coffee is, where it comes from, the different processing methods, and how all of these impact flavors. Coffee has a long supply chain, with many steps to the process, all of which can and will have an impact on the overall quality and flavors we find in the end cup. We hope that learning this information gives baristas a deeper sense of appreciation for coffee, and all the steps that go into making it the delicious end product that we serve. You can book the coffee class here.
